The advantages of scale ice

Our scale ice machines are developed for the highest hygienic and thermal requirements. What sets FUNK scale ice apart:

  • Optimal temperature: At -4°C to -7°C, scale ice ensures extremely fast heat extraction and long-lasting cooling.
  • Hygienic design: Easy-to-clean evaporators enable hygienic ice production for food production.
  • Consistency: The ice remains loose, dry-frozen, and pourable, making it “blade-friendly” for cutters and processing machines.

The decisive physical advantage is the enthalpy of fusion. While cold water only lowers the temperature linearly, scale ice extracts massive energy from the dough the moment it thaws.

Practical example: Cooling 1 liter of water from 15°C to 8°C

  • Using scale ice: You only need 0.090 kg of ice. The resulting volume hardly increases (1.090 l).
  • Using chilled water: 2,000 liters of cold water would have to be added. The volume would triple (3,000 liters), which would completely ruin the recipe and dough consistency.

Conclusion: Scale ice enables an enormous cooling effect with minimal changes to the amount of liquid.

FUNK scale ice is produced on an internally cooled evaporator drum. The water freezes as a wafer-thin layer and breaks off into shards.

  • Rapid melting capability: Because the shards are thin and just below 0°C, they melt quickly and evenly in the kneading machine.
  • Advantage over coarse ice: Thick pieces of ice would unnecessarily prolong the kneading process and disrupt the dough structure.
  • Dosage: It is dry, easy to pour and does not clump, which allows for precise dosing in baking operations.

Cooling water loses its effectiveness much faster than ice due to ambient heat. An experiment at a room temperature of 20°C over one hour demonstrates the difference:

  • Flaked ice: Starts at -0.5°C and is still at -0.1°C after one hour (almost no loss of cooling energy).
  • Cooling water: Starts at 4.0°C and warms up to 9.2°C after just one hour.
